Marinated Souvlaki

Souvlaki is a popular Greek fast food, consisting of small pieces of meat and sometimes vegetables grilled on  a skewer.   It may be served on the skewer for eating out of hand or in pita sandwiches, or plated with roasted potatoes.  The meat is usually pork, but may be made with other types of meat such as chicken, lamb, beef, or fish.

Pork Curry and Feta Burgers

~Pork Curry and Feta Burgers~

So we made it back home after a great ride on our bikes out at Hiawatha today, and I just couldn’t wait to get cooking.  As John fired up the barbecue, I got out the meat which I had mixed earlier, and put into the  refrigerator, waiting  to be made into patties.   I made some great whole wheat burger buns, ( I will post the recipe  later), and link to this page.  Sweet potato fries are a good go with .  I love how the curry and coriander mingle with the feta.  Gotta go now .  Time for some eats!

~Pork Curry and Feta Burgers~

  • 1 lb (454 g) lean ground pork
  • 3/4 cup(175mL) coarsely chopped coriander
  • 1/3 cup(75mL) feta cheese crumbled
  • 4 cloves garlic minced
  • 3tsp(10mL) fresh ginger root minced
  • 2 tbsp(25mL) good quality curry blend or paste.
  • 1 jalapeno pepper, seeded and chopped fine
  • 1 tsp(4mL)cumin ground
  • 1/2 tsp(2mL) black pepper ground

In a large bowl, mix all ingredients together , then place in a ziplock back or cover with plastic, and refrigerate for at least 2 hrs.

Shape into patties, and place on heated grill.  Barbecue on medium heat .  Turn once.  Remove when done at 160 °F(71°C)

Note:  Fresh ginger can be frozen.  Wash , dry, and cut into smaller pieces, then you can take them out of the freezer and chop as needed for recipes.
