I work from home in Northern Ontario doing tech support, to pay the bills. My boyfriend John and I love cooking and cycling together. We make frequent trips to Toronto and Michigan to get supplies that are not available here . As I was whipping up yet another batch of pesto today , with the endless supply of basil growing in my garden this year, I started thinking about how cooking has become so easy for me and more enjoyable over the last few years.

Watermelon Strawberry Daquiri

This is my July beverage of choice .  It  has been a hot summer, without much rain, so smoothies and iced beverages are going fast around here.

 We recently  purchased a commercial blender with a 1.5 horse power motor, that will grind up any frozen fruit you put into it , in no time .  If you don’t have a commercial blender that’s ok , it just takes a little longer to blend that’s all.  

John and I  found ourselves with some left over watermelon one day,  and wanted to do something easy  with it , so this is what I did.  You can omit the alcohol if you like.  

~Watermelon Strawberry Daquiri~ 

Ingredients

  • 2 cups (500mL) watermelon , chopped
  • 2 cups(500mL) ice
  • 2 cups(500mL) whole frozen strawberries
  • splash of lime juice
  • 1 tbsp(30mL) sweetener of choice or sweeten to taste
  • 3 oz. (88mL) good amber rum( make sure it is 100% imported rum )

Preparation

Put watermelon into blender and  blend on low until liquid .   Add strawberries a few at a time along with the lime juice, sweetener, and rum.  Blend on low while adding ice a little at a time.  The consistency should be slushy and thick  .

Put into chilled glasses with a sprig of mint , pop in a straw and you are set to go .
